My Culinary Side – NaBloPoMo

My relationship with cooking took a long and winding road to get to the stage it is at today.

I never spent anytime in the kitchen growing up. My mother was culinary challenged too. She could bake, but never really taught me anything. I learned my own way around the kitchen through trial and many, many, many errors! I completely ruined a pot burning rice type of error.

I would still eat like I was in college, if it weren’t for my husband and children. Did you know that they want dinner every.single.night? It’s exhausting!

And cooking is hard.

Sigh.

There was a time when I would have said that I didn’t know the first thing about cooking and being in the kitchen was like Chinese torture.

That’s not the case any more.

I also realized the difference between not liking to cook or not being comfortable with it and not liking to be a bad cook. There is a big difference. And it turns out, it’s much easier than I thought! It’s time consuming and frustrating, but I know how to make rice now.

My husband and I don’t entertain a part from the occasional playdate or sleepover, for the children’s benefit. My in-laws visit every so often, as does my sister and her boyfriend and I’ll have a girlfriend or two over when my husband travels so I use these opportunities to stretch my culinary skills.

Over the last couple of years, I’ve actually been cooking for my family and they eat what I make.

Most of the time. The children are way pickier than my husband!

We’ve been in our house almost two years and have yet to have a housewarming party of any kind. We need to do that and I’d love to be able to say I prepared all the food served.

Sprinkled throughout this post are some dishes I’ve made this year that haven’t sucked.

As Seen On Pinterest

Let me first preface this post by saying I am not the craftiest mom on the block and I have burned rice at least TWICE, but I can usually follow instructions.

Pinterest, while it may be somewhat of an obsession for me, (I have pinned over 5000 things) it mostly makes me feel inadequate about my life, my body, my homemaking skills and my craft quota. 

I daydream of being that wife and mother that presents her family with four course homemade meals daily, decorates to the nines for each and every holiday, (or and day that end in -y) travels to far-off exotic destinations, always looking stylish and chic while doing any of the above, hand makes everything and knows how to decoupage, macrame and fishtail braid.

Every once in a while, however, I come across an idea I fool myself into believing I can pull off.

Pinterest is a great place for inspiration but the the outcome rarely resembles the picture, at least in my case. But at least I try…

Here are three of my latest attempts that are worthy of sharing!

The Project

I’m pretty happy with the way this project turned out and actually like it better than the pin. Lucas was very excited about it too,  although you wouldn’t know it by his expression. O_o

SIDE NOTE #1: I was a little disappointed that I e-mailed the original crafter for some help and have yet to hear back.

SIDE NOTE #2: 3M Super 77 multi-purpose adhesive is super nasty sticky stuff! If attempting this project, wear gloves at all times. Just saying.

A complete and utter fail!

Photos of food always look better than the real thing, so please refrain from licking the screen.

Ack!

This was a complete disaster, AKA #PinterestFAIL.

After cooling for over an hour, I shook the loaf out of the pan and it fell into itself. Maybe I used too much pumpkin puree, my other ingredients were old, or I missed a step but clearly this did not turn out the way it was suppose to.

My Day In Numbers

12 days until Christmas and like you, my holiday ‘To Do’ list is out of control!

Today was a very productive day….

I addressed, stamped and mailed 100 holiday cards,

visited 6 stores, including Starbucks for a much needed extra dose of liquid energy,

baked 7 dozen cookies (sugar, chocolate chip oatmeal and peanut butter) with the help of a pint-sized sous chef,

did 5 loads of laundry (sadly, underwear still needs to be washed  even though it’s the holiday season),

managed to find an hour to walk 4 miles,

listened to 3 hours of Christmas music,

savored 2 glasses of well-deserved wine,

gave 1 time out,

and ate countless cookies.

Turns out the problem with baking seven dozen cookies is that Lucas had two and was over it. I’m still eating them!

Good thing I am giving the rest away as gifts.

5 Things You Don’t Know About Me:
1. I’m always on time, sometimes even early.
2. I’m as loyal as a dog. Unless you cross me or enjoy creating drama for the sake of drama, I’ll be yours til the end.
3. Name an artist and I can [probably] sing one of their songs. This is a great party trick.
4. I am FIERCELY competitive. Trust me, you want to be on my team when playing Scene It, Trivial Pursuit or Taboo.
5. When watching movies at home, I use subtitles because I don’t want to miss a word.

5 Things I’m Knowledgeable About:
1. Acting like I know what I’m doing.

2. Moving. I’ve moved 14 times since 1991 so I consider myself a pro.
3. Locating a book at the bookstore or library without any assistance.
4. I am uber organized, as in file folders with labels-containers of all shapes and sizes-everything has it’s place kind of way.
5. I’m a really good marketer. Ever since I was 14 I wanted to work in advertising and for 10 years I did before becoming a mother and now I help a few people market their small businesses and help them break into social media and I still love it!

5 Things I Know Nothing About:
1. Applying eye make-up.
2. Changing a tire.
3. Lighting a fire.
4. Cooking. Seriously, I burn rice.
5. Driving a manual transmission vehicle.

5 Things I Believe:
1. I believe in the power of positive thinking, a hug, hot shower, long walk, one-on-one time with someone you love, a good cry, a glass of wine and children’s laughter.
2. I believe everything happens for a reason and while I may not always know what it is, I’m determined to learn from it…. eventually.
3. I believe that motherhood is the toughest job on the planet and something I was meant to do.
4. I believe that life is short and there is absolutely no use walking around pissed off at the world.
5. I believe in Santa Claus.

Be Enough Me

I worry that I’m not the calmest mom, 

the silliest mom,

the prettiest mom,

the fittest mom,

the craftiest mom,

the strongest mom,

the coolest mom,

the smartest mom,

the tidiest mom,

the handiest mom,

or the wealthiest mom.

I know I’m not the most creative, understanding, organized, thoughtful or patient mom.

I’m not very well versed in constellations or dinosaurs. I honestly don’t know why the sky is blue. I don’t cook. I can’t dance. My funny voices sound ridiculous. I forget the words songs once I start singing them and I’m not a very good driver.

I have a terrible weakness for Chai tea lattes, fresh flowers and People magazine and I can not draw a very good train to save my life.

I can read the hell out of any book you bring me as long as you sit in my lap while I read it and I know exactly how to make you smile and no one will ever love you as much as I do, my sweet boy.

Dessert Is Served

With currently 34 boards and over 1700 pins, it was time I finally took the plunge.

It was time that I actually made something that I found on Pinterest.

I did and it was awesome, but don’t take my word for it…

Last Saturday night I had Cheryl, Deb, Monique and Morgan over to enjoy several glasses of wine have a BlogHer post mordem and with my husband out of town, Lucas served as my co-host. Dinner was ordered over the phone, everyone brought wine and I made dessert.

Behold Oreo Cookie Cheesecakes:

This is HUGE for me because I don’t cook or bake, nor do I take very good photos of food. Please visit La Mia Vita Dolce for proper magazine style shots that will make you drool.

The recipe:

Makes 30

  • 42 Oreo, cream-filled chocolate sandwich cookies, 30 left whole and 12 coarsely chopped
  • 2 pounds cream cheese, room temperature
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs, room temperature, lightly beaten
  • 1 cup sour cream
  • Pinch of salt
  1. Preheat oven to 275° F.  Line standard muffin tins with paper liners. Place 1 whole Oreo cookie in the bottom of each lined muffin cup.
  2. In the bowl of a stand mixer, fitted with the paddle attachment, beat cream cheese on medium-high speed until smooth, scraping down sides of the bowl as needed. Gradually add the sugar, and beat until combined. Beat in the vanilla.
  3. Drizzle in eggs, a little at a time, beating to combine and scraping down sides of bowl as needed. Add in sour cream and salt, beat to combine. Using a large spatula, fold in the chopped Oreo cookies.
  4. Divide batter evenly among the cookie-filled muffin cups, fill each cup almost to the top. Bake, rotating muffin tins halfway through, until the filling is set, about 22 to 28 minutes. Transfer the muffins tins to a wire rack to cool completely. Refrigerate (in the muffin tins) at least 4 hours (or overnight).
  5. Add a dollop of whipped cream and a mini Oreo for the coup de gras.

I defy you not to love these.

Rainbow Ribbon Cake – Tasty Tuesdays 2

Sunday, my Mommy & Me group celebrated our one year anniversary and I offered to bring dessert.

What was I thinking?

I don’t cook, but I do enjoy baking from time to time, especially with short cuts.

I assisted my good friend Colleen when she made this cake a couple of years ago for another girlfriend’s birthday and it’s super easy, super cute and super delicious.

Rainbow Ribbon Cake
From Semi-Homemade Cooking with Sandra Lee

Ingredients

For the cake:
1 (18.25-ounce) box white cake mix
1 1/4 cups water
1/3 cup canola oil
3 egg whites
1/2 teaspoon vanilla extract
1 tablespoon each flavored gelatin: lemon, orange, cherry, grape, lime, and blue raspberry
2 cups boiling water

For the decoration:
1 (12-ounce) cans white whipped icing (recipe calls for 2 cans, but 1 was plenty).
Recipe calls for colored decorating icing (yellow, orange, red, purple, green and blue), but I just kept the top of the cake white and used multi-colored sprinkles on the sides.

Directions:
Preheat oven to 350 degrees. Lightly spray 2 (8-inch) round cake pans with cooking spray; set aside. In a large mixing bowl, beat together cake mix, water, oil, egg whites, and vanilla on low speed using an electric mixer for 30 seconds. Scrape down sides of bowl using spatula and beat on medium speed for 2 minutes.

Divide batter into the prepared pans evenly and bake in the oven for 32 to 36 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove pans from oven and let cool for 10 to 15 minutes before turning over onto wire racks to cool completely. Trim off the tops of the cakes, to make a smooth surface.

Place 1 tablespoon of each flavor of gelatin in separate small bowls. Stir 1/3 cup boiling water into each and stir until dissolved. On the trimmed sides of the cakes, splash the different gelatin all over the cakes. Cover cakes, separately, with plastic wrap and refrigerate for 3 to 4 hours. I refrigerated mine overnight and it was fine.
Remove cakes from refrigerator. Unwrap the cakes and place 1 cake on a plate or stand and spread white icing evenly on top. Place the second cake on top and finish icing cake, top and sides with the white icing.

*If you decide to use multiple colors of icing, randomly place big dollops of the colored decorating icing all over the iced cake. Using a small spatula, swirl the dollops together to create a tie-dye/rainbow effect on the cake. Otherwise, gently use hands to cover sides with rainbow sprinkles as shown in photo.

Creature Of Habit

When it comes to food, I am such a creature of habit. I know what I like and I have it over and over and over again, which means there’s not a lot of variety in my diet.

I have the exact same thing for breakfast every single day: toasted whole wheat English muffin with peanut butter, string cheese and a Granny Smith, not a Macintosh, not a Red Delicious, not a Pink Lady, a Granny Smith apple. I can be very irritable if I am out of any one of these items and have been known to drive to the nearby 7 Eleven to get peanut butter. I love my little meal. It’s the perfect combination of carbohydrates, fiber, dairy and protein. I am a big fan of breakfast foods, but only if I go out will I deviate from my menu.

Sandwiches are my preferred lunch and I have been coined “sandwich girl” by more than one friend. I probably eat at Subway at least three times a week and I order the exact same thing every time I’m there: six inch sub on wheat with turkey, Provolone cheese, lettuce, tomatoes, green peppers, red onions, cucumbers, mustard and a little mayonnaise. It fills me up and never lets me down.

As you can imagine, over the years, I have taken a lot of heat for my culinary choices, but I don’t care. I stick with what I know and enjoy and don’t see any reason to change.

I will eat other things…for dinner. I enjoy colorful salads chocked full of veggies, thin crust pizza, sushi that’s not too fishy, the spicier the better Mexican food, angel hair pasta with chicken and spinach and I’d never turn down a big juicy cheeseburger. Thanks to your dad, dinner is when I really mix it up. If it weren’t for him, I’d probably have a bowl of cereal or another Subway sandwich every night. Obviously, I don’t cook. I have never been comfortable in the kitchen. Your dad, on the other hand, is very comfortable in the kitchen and makes us all sorts of yummy creative dishes and we have a great system, he cooks and I clean.

I’ve taken several cooking classes so I do know some kitchen basics and can make a couple of meals but nothing without a recipe in front of me. I find it fascinating when people can throw a meal together by adding a little of this and that and it comes out tasting delicious. I don’t posses that level of confidence when it comes to assembling a meal. Don’t worry though, you won’t starve once you start eating solid foods, there’s wonderful “kid food” (chicken tenders, mac and cheese and hot dogs). All stuff I can handle, even though I will expose you to all different types of cuisine. With my luck, you’ll probably end up being a foodie* with way more refined tastes than your mother’s.

As boring and bland as my diet may be, not too long ago I read an article outlining six reasons to eat the same thing every day and I’d like to share them here:

1. It Makes Shopping Easier and More Cost Predictable: Eating the same foods every week allows you to budget properly for groceries and in the end, makes shopping faster and easier.

2. It Makes Weight Loss or Maintenance a Lot Easier: Whether you want to maintain weight or lose weight, eating consistently the same things can make reaching your goals a lot easier.

3. Knowing Your Body: Eating the same foods helps you understand your body and how it reacts to foods. When you eat new or atypical foods, you will be able to hone in on what foods make you feel too full, gassy, not full enough, etc. Further, it will also give you insights into how your body reacts to chemicals, preservatives and spices. If you eat healthy most of the time, your body will expect that, and so, if you throw it a curve ball, it will let you know whether or not it likes it.

4. It Makes Cooking a Lot Easier: I use whole foods or ingredients and don’t try to get overly complicated.

5. Greater Appreciation for Off-Days: Having a routine for meals makes dining out or those times you do get creative in the kitchen all the more meaningful. New dishes and flavors have much more significance and tend to taste extra scrumptious.

6. Healthy Behavior on Off-Days: If you find the optimal ‘formula’ from #1 above, you will have a good baseline for when you don’t eat the same foods. You will become very accustomed to how much of what kinds of foods you need and will be able to use that as a guide for the days you digress.
